The Story
This green coffee originates from the Shan State highlands of Myanmar, a region defined by its rugged plateaus and ancient red soils. Arabica coffee here thrives at high elevations, typically between 1,200 and 1,600 meters above sea level. This altitude, combined with a significant diurnal temperature swing (warm days and cool nights), ensures slow cherry maturation, which is crucial for developing the complex flavors and bright acidity of specialty beans.
The lot, cherries sourced from multiple smallholder farms, features the majority of Catuai and Caturra varieties. It undergoes a meticulous Washed Process at the Biome Coffee Wet Mill, overseen by the Three Dots Team Processors. Harvested during the dry season of December 2025, this coffee is dried under sunlight for 10-14 days.
