The Story
This specialty Arabica lot is sourced from the fertile, high-altitude slopes (1,400–1,600m) of Mount Apo, Davao, Philippines—the nation’s highest peak. The beans benefit from the region’s rich volcanic soil and stable, cool climate, which ensures slow maturation and complex flavor development.
The lot consists of the resilient Catimor variety, harvested in December 2025 by the BACOFA community. This coffee was processed using the highly controlled Dry Fermentation Washed method by Biome x Princess. This unique approach limits water during fermentation to maximize interaction with the parchment, resulting in a cup profile known for its enhanced clarity, vibrant acidity, and a clean finish.
