The Story
This specialty Arabica lot hails from the high-altitude Doi Chang region (1,200–1,300m) in Northern Thailand’s Chiang Rai province, known for its rich microclimate and fertile soil. This terroir, combined with a cool dry season (the January 2025 harvest), ensures slow cherry maturation and complex flavor development.
The lot, a blend of Typica and Catimor varieties, was centralized at the Abonzo Wet Mill and meticulously processed by the Three Dots Team Processors.
They utilized an innovative Anaerobic, Co-Fermented Honey method. This two-stage process—fermenting in oxygen-starved tanks (Anaerobic) then drying with the sweet mucilage intact (Honey)—is designed to maximize complex, floral, fruit-forward flavors, and yield a cup with amplified sweetness and body.
