Under the seasoned mentorship of Yarsin, Ms. Hnin Ei Cho acted as the dedicated guardian of this lot, steering the cherries through a bold and aromatic transformation.

The process was a meticulous fusion of science and flavor:

  • The Infused Fermentation: The cherries were sealed in an oxygen-free environment for an anaerobic fermentation lasting between 48 to 72 hours. During this time, they were co-fermented with food-grade lychee, allowing the sweet, tropical essence to weave itself into the very cellular structure of the bean.

  • The Sun-Kissed Finish: After emerging from their aromatic bath, the beans were spread across drying beds. For 18 to 20 days, they rested under the open sky, letting the steady warmth of the sun lock in the vibrant floral notes and luscious fruit profile.
