The journey of this coffee began on the mist-covered slopes of Nawin鈥檚 farm in Doi Chang, where the cherries were hand-picked at their peak. From there, they traveled to the wet mill station, falling into the expert hands of Yarsin to begin their transformation.

The process started with a meticulous cleaning and “floating” to select only the most perfect fruit. These chosen cherries were then tucked away for an anaerobic fermentation, resting in an oxygen-free environment to develop their unique character. Once pulped, they returned to the tanks for a 48-hour dry fermentation, deepening the flavor profile further.

To finish, the beans were washed and spread across African drying beds, basking in the direct sunlight for nearly two weeks. Over those 10 to 14 days, the Thai sun slowly locked in the vibrant complexity of a truly crafted lot.
