At an elevation of 1,350 meters on the Lat Pan Pin farm, the thin mountain air and rich soil provide the canvas for a two-year experimental odyssey led by Yarsin. Processed at the cutting-edge Biome Ywangan facility, this lot is the realization of a vision to marry traditional cultivation with modern aromatic science.
The transformation, overseen with unwavering precision by Susie, centers on a sophisticated infused dry fermentation. By introducing specialized yeast and food grade passion fruit extracts during the fermentation stage, the beans absorb a vibrant, tropical energy that is deeply integrated into their structure. Following this aromatic infusion, the coffee is thoroughly washed to ensure a clean finish and then carefully dried, resulting in a complex cup that captures both the heights of the farm and the spirit of innovation.
