The Story
Sourced from the high-altitude peaks (1,200–1,300m) of Doi Chang, Chiang Rai, this specialty Arabica thrives in Northern Thailand’s nutrient-rich soil and distinct microclimate. The January 2026 harvest benefited from a cool dry season, allowing the Typica and Catimor cherries to mature slowly and develop a sophisticated flavor profile.
Expertly curated by the Three Dots Team Processors at their partner wet mill, the lot underwent a cutting-edge Anaerobic, Co-Fermented Honey process. This dual-stage technique—combining oxygen-deprived fermentation with a “honey” drying phase—elevates the coffee’s natural sweetness and body while highlighting vibrant floral notes and fruit-heavy aromatics.
